🥩 Smoky Beef Filling
500g lean beef mince, 1 onion (chopped), 2 garlic cloves (minced), 1 chili (finely chopped), 1 tbsp tomato puree, 1 tbsp chipotle paste, 1 tsp paprika, 1 tsp smoked paprika, 1 can chopped tomatoes, ½ cup water

3–4 red peppers (halved), 1 cup mozzarella cheese
🍚 Lime Coriander Rice
1 cup cooked rice, juice of 1 lime, 2 tbsp chopped coriander

👨🍳 Instructions
Place halved red peppers onto a baking tray and bake at 200°C (400°F) for 25 minutes until slightly softened.
Heat a non-stick pan over medium heat and brown the lean beef mince.
Add onion, garlic, and chili, then cook for 3–4 minutes until softened and fragrant.
Stir in tomato puree, chipotle paste, paprika, smoked paprika, chopped tomatoes, and water. Simmer for 10–15 minutes until thick and rich.
Fill baked peppers with the smoky beef mixture and top generously with mozzarella cheese.
Return peppers to the oven and bake for another 20 minutes until the cheese is melted and golden.
Cook rice in a rice cooker or pot, then mix with lime juice and chopped coriander.
Serve stuffed peppers with lime coriander rice and optional guacamole or yogurt.
