🥖 Brioche Dough
1 cup milk, 2 tbsp cream, ¼ cup sugar, 2 tbsp sourdough starter (optional), 2 tsp yeast, ½ tsp salt, 3½ cups bread flour, 80g butter

1 cup vanilla custard, ½ cup chocolate chips

1 beaten egg
👨🍳 Instructions
In a mixing bowl, combine milk, cream, sugar, sourdough starter, and yeast. Let sit for 5 minutes until slightly foamy.
Add bread flour and salt, then mix until a rough dough forms.
Gradually add softened butter while kneading using a stand mixer or by hand until the dough becomes smooth and elastic.
Cover and let the dough rise for 1–2 hours until doubled in size.
Roll out the dough using a rolling pin into a large rectangle.
Spread vanilla custard evenly over the dough and sprinkle with chocolate chips.
Fold the dough, chill briefly for easier handling, then slice into strips and twist into bun shapes.
Place buns onto a non-stick baking tray and let rise again for 30–45 minutes.
Brush with egg wash and bake at 200°C (392°F) for 13–15 minutes until golden brown.
